Cream cheese banana muffins
My all-time most requested muffins. I started making these in 2016 and they get better every time I make them. The original recipe is from Tasty, but I adapted it to what I had at hand the first few times I made it (sour cream wasn't readily available in Buenos Aires back then).
Ingredients
Banana batter
- 1 large egg
- 100g brown sugar
- 50g granulated sugar
- 120g butter, melted
- 100ml whipping cream (can be replace by 60ml sour cream)
- 5ml vanilla extract
- 2 ripe bananas
- 1 tsp baking powder
- 150g all-purpose flour
Cream cheese filling
- 120g cream cheese, softened
- 1 large egg
- 50g granulated sugar
- 3 tbsp all-purpose flour
Preparation
- Preheat the oven to 350ΒΊF
- Whip the cream to stiff peaks
- Mix together egg, vanilla, sugars, melted butter and whipped cream
- Mash the bananas into the mixture
- Mix in the flour and baking powder
- Set aside
- In another bowl, mix the softened cream cheese, with the egg, flour and sugar
- Line a muffin tin and fill the muffin cups with the batters in three layers:
- 1/3 banana mix
- 1/3 cream cheese mix
- 1/3 banana mix
- Sprinkle the tops with a bit of granulated sugar
- Bake for 25 minutes or until done
