Cream cheese banana muffins

Cream cheese filled banana muffins
Delicious for breakfast (or any time)

My all-time most requested muffins. I started making these in 2016 and they get better every time I make them. The original recipe is from Tasty, but I adapted it to what I had at hand the first few times I made it (sour cream wasn't readily available in Buenos Aires back then).

Ingredients

Banana batter

  • 1 large egg
  • 100g brown sugar
  • 50g granulated sugar
  • 120g butter, melted
  • 100ml whipping cream (can be replace by 60ml sour cream)
  • 5ml vanilla extract
  • 2 ripe bananas
  • 1 tsp baking powder
  • 150g all-purpose flour

Cream cheese filling

  • 120g cream cheese, softened
  • 1 large egg
  • 50g granulated sugar
  • 3 tbsp all-purpose flour

Preparation

  1. Preheat the oven to 350ΒΊF
  2. Whip the cream to stiff peaks
  3. Mix together egg, vanilla, sugars, melted butter and whipped cream
  4. Mash the bananas into the mixture
  5. Mix in the flour and baking powder
  6. Set aside
  7. In another bowl, mix the softened cream cheese, with the egg, flour and sugar
  8. Line a muffin tin and fill the muffin cups with the batters in three layers:
    1. 1/3 banana mix
    2. 1/3 cream cheese mix
    3. 1/3 banana mix
  9. Sprinkle the tops with a bit of granulated sugar
  10. Bake for 25 minutes or until done
